docs: Update non-language specific `docs/translating/` to use channel.
Updates descriptive text that refer to Zulip channels in the `docs/translating` files to use channel instead of stream, except for guides for specific languages as those should be updated by the translation teams themselves. Part of the stream to channel rename project.
